It was my birthday on Wednesday and my lovley boss Mimi baked me the most delicious and moist cake! It’s a Date and Apple cake with a crunchy coconut topping, Not your typical birthday cake but so tasty, I had to share the recipe!
2 Apples peeled and diced
1 cup of chopped dates
1 tsp baking soda
3/4 cup boiling water
1 cup sugar
1 tsp vanilla
1 1/2 cups flour
1/2 cup brown sugar
2 Tbsp milk
1 cup dedicated coconut (preferably shredded)
Combine the apples, dates, baking soda and boiling water and allow to cool. Preheat oven to 180°C.
Line a 23cm deep round cake tin with baking paper.
Cream butter and sugar until light and fluffy and then add vanilla and egg and beat well.
Slowly sift the flour, alternating with the apple mixture.
Pour into tin and bake for 45-60 mins.
Melt the butter with the sugar, milk and coconut over low heat then spoon it over cooked cake.
Return to oven for 5-10 mins until topping is golden brown.
Leave in tin for 10 mins before turning onto rack.
